Fruit and Nut Chocolate Brownies

125g butter
85g soft brown sugar
100g cream cheese at room temperature
2 eggs
80g superfine flour
10g cocoa powder
125g cooking chocolate melted
2 tbsp whipping cream
1 tbsp Bailey's cream (optional)
30g sultanas
50g hazelnuts

Topping
150g dark chocolate, chopped ino pieces
2 tbsp whipping cream
10g butter

1. Preheat oven at 180 C and grease a 17 cm square cake pan. Line the base and sides with greased baking paper. Sift the flour and cocoa powder together twice and set aside.

2. Cream butter and sugar until creamy. Add cream cheese and continue to beat for 2-3 minutes. Beat in eggs, one at a time.

3. Fold in sifted dry ingredients and stir in melted chocolate to mix. Add cream and Bailey's Irish cream to the chocolate mixture. Add sultanas and hazelnuts. Stir to mix.

4. Transfer the batter to the prepared baking tin and baken for 35-40 minutes or until cooked through. Leave to cool in the pan for 10 minutes, then turn out onto wire rack to cool further.

5. For topping, melt whipping cream, butter and chocolate over a very low heat, stirring until smooth. Leave to cool. Spread topping over the brownies.

Banana Walnut Cupcakes

120g butter
120g icing sugar
50ml water, mixed with 1 tbsp white vinegar

Dry ingredients (sifted together)
250g self-raising flour
1/2 tsp bicarbonate of soda
1 tsp baking powder
1/2 tsp cinnamon powder
1/2 fine salt

300g ripe banana, mashed coarsely
50g chopped walnuts

1. Preheat oven at 190 C for 15 mins. Line a 20-hole patty tins with cupcake paper.

2. Cream butter and icing sugar with an eletric mixer until light and fluffy. Add vinegar mixture with a wooden spoon and stir well (Do not beat).

3. Fold in sifted dry ingredients mashed banana and chopped walnuts.

4. Spoon mixture into patty tins and bake in the oven for 15 mins.

5. Remove and cool on a wire rack.

Makes 20

Wrong Location!!

Would you ever get your holiday location wrongly? Yes I did. Stupid right? I misread the location address and innocently called the hotel branch in Kuala Lumpur when the right location is in a secluded area called Kuala Selangor. I only found out when I got up from the bus during the journey.

I'm having a fabulous time here: meeting new friends everyday and learning their views on the environment.

One thing I managed to do is to rub the Beckham's hair of a monkey!!! Yea... that monkey is called Silver Leaf. I thought of touching the baby python... but I changed my mind. It's too eerie to touch it.

Try watching Baraka. It's hauntingly beautiful film.

A song dedicated to all my readers while I'm having a gathering with other environmental crusaders. It's sang by Melody feat Ryohei Yamamoto under series of m-flo loves Melody. Pity Melody is retiring from the entertainment industry next year. And unfortunately this is her best song in my opinion.

Hope you guys like this song! It's my all time favourite song!
