I am terrible at recommendations. I always felt that each Final Fantasy had some special aspect that made it differ. If graphics don't bother you at all, then I recommend the games 1-6. If you need some 3D then go from 7 to the latest game; however, 7 is the first game to use 3D graphics...so the characters may look awkward and polygon-like. I always thought their arms resembled bowling pins. I always thought that the characters from FF IX brought the 'fantasy' aspect into Final Fantasy. There are these odd looking characters who join the protagonist on his quest. Most of the characters either don't look human or look demi-human. FFV changes it up with having more than half of your party members being female and they enable the player to customize his team by changing their roles in battle. MY personal favorite is FF VI.
