Peppermint Chocolate Fudge

Who can do without fudge for the holidays??


Original recipe yield:
2 pounds
PREP TIME 10 Min
READY IN 2 Hrs 10 Min


INGREDIENTS

* 2 cups milk chocolate chips
* 1 cup semi-sweet chocolate chips
* 1 (14 ounce) can EAGLE BRAND® Sweetened Condensed Milk (NOT evaporated milk)
* Dash salt
* 1/2 teaspoon peppermint extract
* 3/4 cup crushed hard peppermint candy

DIRECTIONS

1. In saucepan, over low heat, melt chips with EAGLE BRAND® and salt. Remove from heat; stir in extract. Spread evenly into waxed paper-lined 8-or 9-inch square pan. Sprinkle with peppermint candy.
2. Chill 2 hours or until firm. Turn fudge onto cutting board; peel off waxed paper and cut into squares. Store covered in refrigerator.

I went out tonight and had a great time. Now it was time to eat!! Other than dessert, dinner is the best time of the night. I know! Get a life! So anyway... My bff and my daughter and I go to Lucky Strike. It is a nice restaurant with some bowling lanes and good food. We walk up and the guy says that after 7pm you need to be 21 to get in. I got rejected and turned out!

So we now decide to go downstairs to PF Changs. They have good chinese-american food; nice ambiance and linen. So we all order tea and get our own teapot. It was really nice. We order our food then this loud siren goes off and lights are flashing. No, we did NOT win a prize. That was the fire alarm. We thought that maybe someone didnt want to pay their bill so that pulled the alarm.
Shortly after that, the manager comes over and tells us that there was a fire in the kitchen and they cannot cook anything else for the rest of the night. So sorry for us... we will have to leave. WHAT?? We are getting kicked out again!? This is the second time in the same night. Now where are we going to eat? Maybe someone was trying to tell us something!? We were lucky enough to get 10 each to come back on another night and we did not have to pay for the tea.

I have been rejected before but not twice in the same night! ha ha! That was just too much. We ended up at a Yakitori place and we had nice meal. Everything turned out just fine!

My son gets sick every now and then but his fever today is 103! His whole body is like a heat rock and his cheeks are rosey red. He is coughing and throwing up after he coughs.

I took him to the doctor yesterday and had such a hassle getting to see our regular physician. They said , "she leaves at 11:30 but we can squeeze you in at 11." Ok, we get there at 11 and waited until nearly 12 just to see her. Then we only see her for less than 5 min. and leave with no prescription because he only has a viral infection and not a bacterial one. It was a little frustrating but I do not trust any other doctor.

I was checking my email and I received this thing about hazzardous waste removal. Like I carry 100lbs of hazzardous waste in my appartment. Yeah, well actually he is about 180lbs and 6ft tall to be exact but I dont think they will be picking him up anytime soon.

On Saturday, April 21, 2007 from 9 a.m. to 3 p.m. at the Betty Ainsworth Sports Center located on El Segundo Blvd. and Doty Ave. there will be a Household Hazardous Waste Roundup where Los Angeles County residents can bring up to 15 gallons or 125 pounds of household hazardous waste per vehicle to the roundup for disposal.

There are also permanent collection centers where residents can bring their household waste, E-waste (is unwanted electronic products such as computer monitors, TV's etc), and Universal Waste (includes household batteries, mercury containing equipment and fluorescent lights) for disposal. The following are a list of permanent collection centers including hours of operation. Permanent collection centers are closed on New Year's day, Memorial day, Independence Day, Labor Day, Thanksgiving Day and the day after Thanksgiving, Christmas Eve and Christmas day.

I am not really a movie buff but I have seen a lot of movies lately. I think it is because I am stressing about the surgery that I find movies to be a pleasant distraction. I saw Reign over me. It was kind of a sad movie. I dont even know if it was true or not. My best friend went to college (cal arts) with one of the main actors. He was the guy that played Dr. Johnson.

It had some funny parts because Adam Sandler was in it but it was kind of a slow movie too. I guess I really felt for the guy.

We ate at PF Changs. I like their seared lamb there. Lamb is really gamey but they do a good job at cooking it and making it taste "just like beef." It was good.

What a MARVELOUS meal.

There are things about the road and driving that are just so annoying. You know what I am talking about.. people that drive slow, people that signal but never turn, those that rush past you only to meet you at the red light. Annoying right?

Well the one thing that I find to be the MOST annoying is window sticker on the back of peoples car that tell you how many people are in their family. You mostly see them on the back of family vans that say, Mom, Dad, Judy, Jake, Janice and then the dogs name or the cat. ANNOYING!!! Who the frack cares?? Arent they the least bit concerned that maybe someone will go to the school and say, "hey judy, I am a friend of your mom and she told me to pick you up today?" Hello??

Anyhow, I found the solution to all this annoyance!! A picture speaks a thousand words!!!
