i am going to not eat meat until december 24th for funzies. maybe it'll improve my health.

it is day one.

so far, i have eaten a bowl of cereal, some kettle corn, and a mandarin orange.

...this is going to be tricky.

p.s. if you guys have any good vegetarian recipes, then please let me know.

NEIIIIGHHH. GO for hummus. It's packed full of nutrients that you won't get easily without meat. If you want me to send you a bunch of recipes, I would be happy to do so! Especially since I know cheap and quick ones. :P

There is too delicious vegetarian bacon. It tastes kind of like fake bacon bits, though. Morningstar is the best in my opinion but I try to stay away from the fake meat products because they're not very healthy.

Anyway, if you're only abstaining from meat and not going like, vegan for a few weeks, omelets are good. I like mine with cheese and tons of spinach. :D Usually I make sort of a sandwich by toasting some sourdough bread and putting the omelet between the slices.

Quinoa's also really good. It's got a lot of protein and nutrients, and you can make it in a rice cooker! One thing I do sometimes is make some quinoa (red, because that's just the kind we get) and mix it with tapenade, feta cheese, and diced cucumber. (And salmon, since I'm pescetarian, but I'm guessing you're staying away from fish, too) Add a little cayenne, maybe a little lemon juice, salt if you want it... it's flexible.

You can make tacos with refried black beans instead of meat for the filling, or burritos. Add some rice in there (seasoned if you want), shredded lettuce, cheese... Not very authentic, of course, but I think it tastes good. :P

Trader Joe's is pretty awesome when it comes to this kind of stuff so if there's one around you, you could go there to get ideas/pick up ingredients.
