Orange-Lemon Cookies... yay less sweet

Dear Diary,




As mentioned at the last previous post, i reduced the sugar measurement, and it turned out Oishii...

Anyway, i double the ingridient since im making double quantity... hence :

250g butter or unsalted margerin (butter is the best)
3/4 cup sugar (u can add more if you like as sweet as my maid)
4 cup self raising flour, sifted
1/2 teaspoon baking soda
4 orange skin peel and chop
1/2 of fresh orange juice
1/2 lemon skin peel and chop
1/5 of fresh lemon juice
2 eggs

1. Creaming method
2. add in orange juice + lemon juice + orange skin + lemon skin to the mixture
3. add in self raising flour
4. heat oven 180c and bake for 10min-15min or until the cookies turned golden brown

P.s: Creaming method - add in butter and sugar, beat until fluffly and pale, then add in eggs

Cream puff.... er.... Ice Cream Puff... :D

Dear Diary,


Any cream puff fans out there.. i'm not really a fans... until i tasted cream puff by my mum and papa beard... (both have diff texture) and i love it... and later... after watching zettai kareshi... woah... making me wanted to bake some cream puff... :D

I obtained this recipe from HERE but i modified some of the ingridients to suit my tongue and the method used (my mother taught me some)

And the recipe turned out great :D

Ingridients:-
For the Puff
2 cup water
200gram butter, cut into small pieces
1/4 teaspoon salt (optional, i only put it if im using unsalted butter, if not it will be too salty)
4 cup whisk bread flour (my mum said it can substitute with white flour)
6 large eggs, beaten
3 egg whites [reserve yolks for custard]

The Cream (custard)
1/2 cup sugar (yeah i reduced the sugar)
10 tbsp. whisk flour
1/4 tsp. salt
800ml evaloparated milk
3 egg yolks, beaten
2 tsp. vanilla extract
1 tsp lemon grind or orange grind
2 tsp fresh lemon juice or orange juice (u can mix tho)

Methods:-
The puff

1. Preheat oven to 216 C, line a baking sheet with parchment paper, do no grease it.

2.In a small sauce pan, pour in the water, and butter, cook in medium fire until boil.

3. After, reduce the heat to low, and pour in the bread flour little by little because it might group all together if u put in all at once (well it happened to me) and stir until the dough form a ball and no longer stick to the pan.

4. Move the dough into the mixer and mix it with paddle in low speed until slight cold before add in the eggs one by one and move it to medium speed.

5. Once the eggs are fully combined, the dough will be soft n a little sticky.

6. Put the dough into the dough plastic bag, and make a hole at the bottom, pam out the dough onto the baking sheet. Before baking it, stir up the dough with toothpick (to make the dough stand up and wont look flat).

7. Bake the puff for 20minutes or until golden brown ( if the puff size is small, reduce the baking time to 10minutes or less as suggested by HERE)

8. Turned off the oven, and left the puff for 5-10minutes before moving it to wired rack. (i didnt prick it, since my mum said dont need to ... haha)

Custard/Cream (this is too creamy for me tho)
1. Mix Sugar, flour, into the saucepan over medium heat, slowly pour in the milk and stir it constantly until smooth. Bring it to simmering boil.

2. Mix some hot mixture with the egg yolks and stir well, later returned it back to the saupan, stir constantly until boil (smooth) Remember to stir, if not it will create lumps

3. Remove from heat, mix in the vanilla, lemon grind and lemon juice, stir and is ready to use. (put in the refrigerator b4 serving will be nicer)

However..... im not a big fans of milk, so i dont fancy the creamy smell @@'' (the smell is QUITE strong) instead... i substitute the custard with Ice cream and served haha... my mum substitute it with peanut butter @@''

Dear Diary,


Since yesterday i have the urge to bake cookies, due to a long period of discussion with one of my gaming friend about cookies, ice cream and cake... i decided to bake a tin... lol...

so i search through recipe online at Kraft.au and happen to find a Coffee, Cho chip biscuit... so without any hesitation... i decided to try it....

the result was ok, very crunchy and yummy but amai... (too sweet)... which one of my maid was overjoyed ... because she love sweet stuff... imagine, when she drink plain water, she will take another spoon of sugar just to eat it... @@"' so ended up the cookies... is her love...

i make different shape of cookies with the cookies cutter... Kawaii... and my very last cookies shape was my dog head.. hahaha i make a super extra large cookies.. and i gave to my maids... since my dog cannot eat chocolate...

ill make improvement to the cookies recepi b4 i post it here...



Of course.... the cookies.... dont drool plz...

Coffee Cake Muffins

I bake muffin yesterday, since im bored with cookies baking... too hard for me to chew :P

browse through Martha Stewart's recipe and modify part of it... and there u go ~~~





Makes 12 jumbo muffins

FOR THE STREUSEL TOPPING
1/2 cup packed dark-brown sugar (original recipe is 1 cup but i reduce the sugar , too sweet)
1 cup all-purpose flour (spooned and leveled)
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 cup (1 stick) chilled unsalted butter, cut into small pieces

FOR THE MUFFINS
1/2 cup (1 stick) unsalted butter, room temperature plus more for pans
1 3/4 cups all-purpose flour (spooned and leveled), plus more for pans
2 teaspoons baking powder
1 teaspoon baking soda
1 cup whipped cream (original recipe is sour cream - i dont have any)
1/2 cup granulated sugar (original recipe is 1 cup but i reduce the sugar. too sweet)
1 teaspoon pure vanilla extract
2 large eggs
1 teaspoon coffee powder (not in the recipe, but i add in, since the title is coffee cake muffin @@'')
Confectioners' sugar, optional (for deco)

Directions
1. Prepare streusel topping:
In a medium bowl, stir together brown sugar, flour, salt and cinnamon. With a pastry blender or two knives, cut in butter until mixture resembles large coarse crumbs; refrigerate until ready to use.

2. Preheat oven to 350 degrees (180 Celsius). Prepare muffins: Butter and flour a jumbo 12-cup muffin tin (or two 6-cup muffin tins). In a small bowl, whisk together flour, baking powder, and baking soda; set aside.

3. Using an electric mixer on medium speed, beat together butter, sour cream, granulated sugar, coffee powder and vanilla until light and fluffy. Beat in eggs, one at a time, until well combined. With mixer on low, beat flour mixture into butter mixture.

4. Divide half the batter among prepared muffin cups. Top with half the streusel mixture, then remaining batter, and top with streusel. Bake 25 to 30 minutes or until a toothpick inserted in center of a muffin comes out clean. Cool in pan 5 minutes, then transfer to a wire rack to cool completely. Dust with confectioners' sugar, if desired.

Mini Apple Pies~

Dear Diary,


At last after 1 and a half years of planning to bake an apple pie, i managed to bake one yesterday, but my apple pie version is small stand alone, instead of a huge pie plate...

This recipe is from a good gaming friend of mine, but she and her husband seems to be missing in action, idk why, i tried to email them but no reply, :(, hence i can't share the recipe here yet until i got the permission from her :D...

Oh her pie recipe received 1st prize at the town baking competition :D, so no recipe but 2 pictures to share~
