Following the collapse of the Soviet Union and the embargo imposed by the United States, Cuba saw its oil supplies stop abruptly. Food production rested heavily on oil: faced with the possibility of starvation, low energy ways of producing food had to be implemented: it not only improved the health of soil and environment but also of the inhabitants of the island.
