Orange and Lemon Cheesecake~~~ it tasted SO GOOD!

Dear Diary,





Ingredients:

Is for 22cm / 11 inch based

For the based (A)

1~2 cups of Digestive biscuit (crush) or more depends on your based (graham cracker is good too)

2~160gm of melted butter (can substitute w margarine but butter often taste n smell�fs better)

For the Cheesecake

1~500gm of Cream Cheese (I used Philadelphia)

2~1/3 Cup of Castor Sugar (Castor Sugar is used because it melt faster than the normal sugar)

3~1 orange zest and juice

4~1 lemon zest and juice

5~Whipped cream (since I don�ft have the cream the recipe mention haha)

p.s if u were to beat the whipped cream make sure everything is cold~

Methods:

Based~

1~Crush the digestive biscuit to fine (you can use traditional method by placing the biscuit in the plastic and rolled it over w roller or use food processor

2~Melt the butter in microwave oven or double boiling method.

3~Place the crush digestive biscuit in the mixer (or a mixing bowl) and mixed it with melted butter

4~Remember to Grease the container ~

5~Pressed in the (A) as the based and keep it chill for 15 minutes while you work on your cheesecake~ or bake it for 10-15minutes

Cheesecake

1~place in 500gm of cream cheese and sugar mixed till combined.

2~pour in small amount of orange juice & lemon juice and mixed well.

3~place in orange and lemon zest and allow it to mix

4~ place in whipped cream and mix till combined.

5~pour in the mixed cheesecake on top of the based and chill it for 3 hours and above�c. And served~

Of course you can sprinkle some orange zest on top of it to make some decoration�c and my deco sucks!

Colourful Lychee Agar Agar

Dear Diary,


The other day i helped my mum in making colourful lycee agar-agar, i was bugging her, because my aunt taught her the method to make the agar-agar have unequal distribution of colours, it make it look nice ~ haha and we added some cans lychee to add fav to it :D

I dont have the ingridient because mostly we just followed the instruction from the agar-agar powder packaging.

Method:
Cooked half of the agar agar powder in a separate pan, and depends on individual, if you wanted to have lots of colors, then you needed to prepare lots of bowl.

in each bowl, add in a little bit of food colour and after the agar-agar is ready, pour it into the bowl with colours and mix well, chilled until harden.

Once it is harden, cut the agar-agar (different color) and simply put it on the main agar-agar mold.

now cook another half of the agar agar powder, and pour it ontop of th colourful harden agar-agar, cool and chilled.

You will have this beautiful effect~

Unforgettable Banana n Dark Chocolate Cake~

Dear Diary,


Been years i never bake this cake, this is the 1st cake attempt by me and renaye, it tasted so good, that sometimes i told ppl my Chocolate Banana Cake is much better than Secret Recipe~

Remembering renaye came to my house, destroying and bombing my house kitchen to make this cake into a successful masterpiece, and yes indeed it turned out to be my favourite cake of centuries haha....

too bad, it was old day, so i do not have nice photos taken, only a dark patch of cake if u really wanted to see... (by the time, photography never come into mi mind)...... anyway today i decided to type it out... since i discovered my old recipe book~ that i had written on... :D

Ingredients:
1~250gm self raising flour (sifted)
2~1/4 tsp salt
3~1/4 tsp bicarbonate soda
4~100gm bitter chocolate roughly chopped
5~300gm banana
6~1 tbsp of lemon juice
7~125gm of butter
8~100gm castor sugar
9~2 large eggs

Topping:~
1~75gm of cooking chocolate
2~1tbsp of softened buter
3~2tbsp of Whipping or double cream (dont put too much, or ur chocolate will turned hard which is impossible to top on the cake)

Method:
Preheat the oven 1st~ at 170Celcius

1~Sift the flour, salt, bicarbonate of soda together twice (the more you sifted he flour, the texture will be better). Stir in the roughly chopped chocolate & set aside.

2~ Mash the bananas n add in the lemon juice (lemon juice prevent the banana turned black~)

3~ Butter and Sugar in creaming method until fluffy. Add in eggs one at a time (yes one at a time, if you add it too much at a time, the mixture will turned moist and hard to rebeat till fluffy.

4~Fold in the banans, and followed by the flour and chocolate

5~Greased the cake pan with butter and spoon in the cake mixture.

6~Bake the cake for 40-50minutes or until risen at 170Celcius.

7~Leave the cake in tin for 5 minutes to cool and later turned it on the wire tray.

To make the topping
1~ Roughly chopped the cooking chocolate and doule boiled it (a bowl with simmering water at the bottom. Stir the chocolate occasionally.

2~Once melted, set aside for 10 minutes before adding in butter and cream

3~If the topping get too stif, stir in a tiny bit of milk.... and you will get spreadable glossy chocolate topping.

Ps: i forgotten where do renaye get this recipe, but i really love it so much, and i reduced the sugar fom 150gm to 100gm... since my taste bud is different from others :D i cant tolerate sweet stuff well @@''

Cream puff.... er.... Ice Cream Puff... :D

Dear Diary,


Any cream puff fans out there.. i'm not really a fans... until i tasted cream puff by my mum and papa beard... (both have diff texture) and i love it... and later... after watching zettai kareshi... woah... making me wanted to bake some cream puff... :D

I obtained this recipe from HERE but i modified some of the ingridients to suit my tongue and the method used (my mother taught me some)

And the recipe turned out great :D

Ingridients:-
For the Puff
2 cup water
200gram butter, cut into small pieces
1/4 teaspoon salt (optional, i only put it if im using unsalted butter, if not it will be too salty)
4 cup whisk bread flour (my mum said it can substitute with white flour)
6 large eggs, beaten
3 egg whites [reserve yolks for custard]

The Cream (custard)
1/2 cup sugar (yeah i reduced the sugar)
10 tbsp. whisk flour
1/4 tsp. salt
800ml evaloparated milk
3 egg yolks, beaten
2 tsp. vanilla extract
1 tsp lemon grind or orange grind
2 tsp fresh lemon juice or orange juice (u can mix tho)

Methods:-
The puff

1. Preheat oven to 216 C, line a baking sheet with parchment paper, do no grease it.

2.In a small sauce pan, pour in the water, and butter, cook in medium fire until boil.

3. After, reduce the heat to low, and pour in the bread flour little by little because it might group all together if u put in all at once (well it happened to me) and stir until the dough form a ball and no longer stick to the pan.

4. Move the dough into the mixer and mix it with paddle in low speed until slight cold before add in the eggs one by one and move it to medium speed.

5. Once the eggs are fully combined, the dough will be soft n a little sticky.

6. Put the dough into the dough plastic bag, and make a hole at the bottom, pam out the dough onto the baking sheet. Before baking it, stir up the dough with toothpick (to make the dough stand up and wont look flat).

7. Bake the puff for 20minutes or until golden brown ( if the puff size is small, reduce the baking time to 10minutes or less as suggested by HERE)

8. Turned off the oven, and left the puff for 5-10minutes before moving it to wired rack. (i didnt prick it, since my mum said dont need to ... haha)

Custard/Cream (this is too creamy for me tho)
1. Mix Sugar, flour, into the saucepan over medium heat, slowly pour in the milk and stir it constantly until smooth. Bring it to simmering boil.

2. Mix some hot mixture with the egg yolks and stir well, later returned it back to the saupan, stir constantly until boil (smooth) Remember to stir, if not it will create lumps

3. Remove from heat, mix in the vanilla, lemon grind and lemon juice, stir and is ready to use. (put in the refrigerator b4 serving will be nicer)

However..... im not a big fans of milk, so i dont fancy the creamy smell @@'' (the smell is QUITE strong) instead... i substitute the custard with Ice cream and served haha... my mum substitute it with peanut butter @@''

Strawberry Almond Tart

Dear Diary,


Yesterday i tried the recipe by Kak Hani, because her tart look so tempting... :P

I replace Prune w Strawberry because is hardly found in Malaysia or Penang (i search 2-3 super markets ya know)? Idk... but the end result using strawberry is still very yummy.

But a bit soggy (or is it suppose to be soggy) maybe it might due to my maid choke my tart by putting a plate on top of it... so it sweat @@'' - yesterday my mum bday so we went out to celebrate and my tart was baking half way... so what to do... have to trust my maid to help me right... @@''

will redo again... but not so soon... cause mum said fattening.






I'll Just translate Kak Hani's recipe to english here.

-base (for 20cm)-
100gm multi purpose flour
30gm almond powder
75gm butter (cold)
30gm sugar
1 biji egg york (M size)

-almond cream-
60gm almond powder
60gm butter (room temperature)
60gm sugar
1 biji egg (M size)
10gm cornstarch

-topping-
10 fresh prune (cut into 4)
1 table spoon of icing sugar (confectioners sugar)

-Method-
1. Mix the flour, almond powder and sugar until combined. Cut the butter into cube and mix well until it have the bread crumb texture. pour in the egg york until combined . Grease your tart pan (pie pan) with butter and press the mixture onto the pan. Later wrap it with plastic bag and chill in the refrigerator for 1 hour.


2. preheat oven ke 180��. and bake the crust for 10 min or until golden brown. Cold in inside the pan.

3. almond cream - beat butter and sugar until fluffy and add in almond powder. beat the egg with fork and add in to the mixture little by little. add in cornstarch until it combined.

4. pour in the almond cream onto the crust. arrange the strawberry or prune) and bake in 180�� for 30 minute. decorate with icing sugar or jam to make the tart look shiny.

Lol Kak Hani... boleh ke my translation?

Frozen Chocolate Banana :D

What do u do when u r a chocolate addict and have plenty of dark chocolate at home as well as banana at home? "Grin", for me ill look up on the internet for the recipe, simple and easy recipe that did not require oven or any tools, (because my mum wont let me touch her oven, i need to ask permission and such and sort of fill in form)

And i recall a manga that i read, this main character was so fond on chocolate banana, and often chocolate banana save his life @@'' and off me go to search for the method of making it... ermm within split seconds, lots of recipe related and non-related were all listed down... haha i was drooling while browsing through @@''


Okay to make this -




You Need
Banana
Chocolate
Peanut
Freezer

1. Freeze the banana in the freezer until it harden (but for me i just freeze for 30 min cause i lazy to wait)
* cut the banana into small portion or u can just have the whole banana. *remember to use foil or baking paper at the base so it wont stick on the plate*

2. melt the chocolate ( i use 80% dark chocolate) and i add in a bit of butter
- u can use microwave to melt it (stir every 30 second for 2 min or until it melt)
- double boiling method ( a saucepan and a bowl ) put the bowl on top of the hot water and stir the chocolate *Remember dont let the water get into the chocolate bowl.. or it will turn into chocolate drink*

3. bring the banana and coat it with the melted chocolate, if the banana is cold enough, the chocolate will immediately harden. So b4 it harden, sprinkle some chop nuts (for my case i use peanut) .

4. Well thats all, keep in the freezer again for an hour b4 you have a bite. :D
